We continue to eat through the produce basket I purchased. Monday should use up all the remaining, except for a bunch of green onions and half an English cucumber. I see cucumber sandwiches in my lunch future this week.
This week is a little calmer. It’ll be a regrouping week, for schedules and more. To make our lives easier (and that’s what menu planning is all about), I’ve planned simple yet delicious meals for us. I’ve been adjusting for just three of us, but it’s really hard to go from making food for 5 (#1 ate for two) to meals for 3 decent appetites. But I’m getting there. As soon I get this right, he’ll be back, just watch.
Anyway, here’s what’s on our dinner menus. All rice is brown and grains are whole.
Sunday: Potluck sandwiches, salads, possibly Uncle Bill’s Microwave Potato Chips, honeydew melon.
Monday: Italian soup with leftover vegs and frozen tortellini, small green salads.
Tuesday: Lean beef burgers with buns for the guys, baked “fries”, whatever veg remains or corn.
Wednesday: Shanghai Chicken Meatballs, brown rice, peppers and onions from the freezer.
Thursday: Salmon filet, brown rice pilaf from leftovers, green salads.
Friday: Beef meatballs from the freezer, whole wheat spaghetti, broccoli.
Saturday: YOYO grazing for one.
These seven dinners for us will cost about 19.00, with salmon being the biggest expense. I’m incorporating more fresh vegs during the day, as well as in dinners.
Goals for next week: Do another freezer/pantry inventory and plan some seriously fall meals. My OktoberBake comes to mind, and chili….
