We had a lovely Fourth of July. Beautiful weather, we all got to do fun stuff, and it was relaxing! Trying to watch fireworks from the top of a state park tower was, however, impossible. Our little secret has been discovered, and we’ll have to find an alternative for next year.
This week we are down to three. Well, four if you count the extra person #1 is apparently eating for. We have much more flexibility this week since we all drive and have access to vehicles. Nice! Since Sunday is my easy/Sabbath dinner night, I’ve been coming up with ideas to use planned overs and easy fixin’s on Sundays.
And on Monday I go to the doc to find out what the heck is up with my shoulder, which has been getting worse since the end of April. Treatment could put me out of commission for a while, so my meal plan reflects making it easy on the guys to prepare. Here’s what’s on our dinner menus this week.
Sunday: Pork for the guys, zuchinni boats, leftover chicken breast for me.
Monday: Spaghetti marinara, broccoli, cheesy breadsticks.
Tuesday: Pork enchiladas and chicken enchiladas (made Sunday from leftovers), salads.
Wednesday: Black bean soup (maybe with some leftover meat from the freezer?), salads.
Thursday: Crock Pot Meatloaf similar tothis one, mashed potatoes, green beans.
Friday: Date Night! Grilled steaks at home, fresh veg (probably corn), salads. Free concert. Home for dessert.
Saturday: Homemade individual pizzas. Love! All back home again.
These seven dinners for us will cost about $20.
We’re going on a pantry cooking adventure starting now. With vacay coming in a few weeks, and expenses from graduation, this is appropriate. Shouldn’t be a problem, with the variety and volume that I have. However, most of what I have is ground beef and chicken breasts, with Italian turkey sausage, bratwurst, and a little this and that.
