We’re in summer dinner mode (at least I am) here, and that means light and/or grilled. But for busy weekdays, that means easy and cool, except for one new recipe I’m trying in advance of a potluck. I’m so happy to be finding grocery deals, like 1.99/# turkey Italian sausage chubs, .99 pork chops for the guys, 1.99/gal. milk, etc. It really helps keep the grocery bill down. Here’s what’s on our dinner menus this week.
Sunday: Cold Italian pasta salad (extra pasta cooked Saturday, .88, pepperoni ~1.25, zuchinni .99/#, cheese .50, dressing .25), ice cream for dessert (.44 for 1/4 carton @ 1.77).
Monday: “Chicken Tetrazzini Hotdish” from a library mystery (total about $5), salads (.25). (I hope it rains this day.)
Tuesday: My signature Pizza Burgers (about $1 each), with buns (.11 each), corn on the cob (parcooked and frozen, $1).
Wednesday: Crock Pot pork chops (.99/#) with kraut (.65), Crock Pot baked potatoes, chicken breast for me (~.40).
Thursday: Fourth of July picnic at a park: TBD, but probably burgers or brats, chips and homemade dips, red velvet cupcakes (from that same library mystery), veg plate. Estimating $7 for the day’s eats. Watching area fireworks from the tower at the park.
Friday: Italian skillet (sausages 1.99, pasta .88, tomatoes .40, beans .15 (dried, Crocked and frozen)), salads (.25)
Saturday: Homemade top-your-own pizzas (breadmaker dough ~.75, sauce1= .25, sauce2= .15, pepperoni 1.25, leftover chicken, cheese .99, other misc toppings ~$1).
These seven dinners for us will cost about $34. Meh. We have a full house this week, but the picnic might not cost as much as planned. Pizza burgers are a real treat for us (secret recipe).
