2013 Menu Planning: 6/23 – 6/29/13

wklydindealsHot, humid, and busy here lately.  Sudden thunderstorms make me want to just curl up, but life must go on, including dinner on the table.  This week is easy-peasy for me, so that’s good.  I planned out two weeks to keep sane.

We’ve got some out of the house for a few days, and I’m even doing a Crock Pot meal, which I haven’t done in a while, don’t ask me why.  Yesterday I decided to try to find a copy of The Mediterranean Slow Cooker Cookbook, since the library doesn’t have it.  Sounds awesome, but I have to find a d.e.a.l.  May need to Amazon it.

I’m so happy produce is bountiful and relatively Cheap right now!  Most of it looks really vibrant and fresh.  I have no veg garden this year, but let’s not discuss that.  Here’s what’s on our dinner menus this week.

Sunday:  Leftovers.  True unexpected leftovers for three of us.  Free!

Monday:  Chicken and Pepper “Fajitas”  (chicken 1.33/#, peppers 2.75 for combo of 3 peppers), frozen corn for the two guys.

Tuesday:  Crock Pot Beef and Broccoli (eye of round steaks .55/# — really!, broccoli .99), brown rice (.35).

Wednesday:  Crustless quiche TBD with leftover produce (eggs .97/doz), salads (romaine .99 for a HUGE head, so .25).

Thursday:  Two camping, one out with friends, one OYO.

Friday:  Two camping, one joining them, one OYO.

Saturday:  Pasta (.88) with meat (1.50) sauce (.88), cheese breadsticks (~1.75), green salads (.25).

These seven dinners for us will cost about $13 — WOO HOO!  Who’s happy now?!  I must say that one thing keeping the cost down is one less diner who eats for two.  Another, we’re watching our portions after a visit with older relatives that very little.  That put a lens on our eating habits, especially with our getting ready for a high-altitude vacay.

One deal to share:  BagNSave’s sale on Sheboygan brats for 1.99/pkg is awesome, but ends Tuesday, 6/25.  There are 5 per package, and I got 20 packages that went in the freezer for a party we’re having in August.  You can be sure that any leftovers will be eaten by my fam in a timely manner.
