2013 Menu Planning: 6/9-6/15/13

wklydindealsOkay, it’s been a looong while since I posted our weekly menu.  To beat the Monday morning blues, I’m writing this post days in advance and scheduling a later publish date.  HA!  Take that, demons of the aged!  (That’d be me.)

Summer is here, but the temps are still lovely in the high 70s — a FAR cry from last year.  But with crazy busy guys’ schedules, I haven’t been grilling much.  I hope to change that this week.  We have been eating well, though, and making great use of leftovers (4 meals for them from a pork roast, with chicken for me).  I’ve been hitting the sales and loving the fresh produce variety.

Boneless skinless chicken breasts have been on sale here for a few weeks with the best deal at HyVee 3# for 3.77 with a mailer coupon.   Also on sale for a while: broccoli crowns .99/#, leaf lettuces .99/head, and potatoes 5# russets .99.  Double coupons at BnS/NoFrills made for lots of deals.  And I’ve stumbled upon awesome meat deals (tenderized beef round steaks .55/#).  Here’s what’s on our dinner menus this week.

Sunday:  Chicken and Pepper “Fajitas” (always cheap and filling) (chicken 1.33/#, peppers 1.39 for 3 stoplight peppers), tortillas, possibly salad.

Monday:  Smoked beef sausage (1.99) with rotini, kraut and butter (a family fave), with green beans (.33).

Tuesday:  Hot dogs (.88) with buns (.88), chips (1.67), carrot and celery sticks.

Wednesday:  Jalapeno Honey Pork Chops With Grilled Vegetables recipe from the newest Walmart ad, chicken cooked the same for me.  The ad says 2.79/serving, but I can serve this for $4.50 for all.  Serving this with brown rice.

Thursday:  Grilled chicken breasts (1.33/#), Italian pasta salad (penne, pepperoni, peppers, onion, tomato, dressing), zucchini.

Friday:  Grilled burgers, baked home fries.

These seven dinners for us will cost about $25.  Groceries are getting outrageous, aren’t they?
