Is it spring? Winter? What?! Do I plan for soup, or dinner salads? I thought I had it figured out, but nope. There’s a cute meme on Facebook about our weather.
Well, better late than never with this week’s menu. I’ve been rearranging it, anyway, so here’s what I’ve got for our dinners this week:
Sunday: Lasagnes from the freezer, salads.
Monday: Ranger Mac & Cheese from the freezer, leftover from a campout, and salads.
Tuesday: Italian chicken and pepperoni zuppa (made it up, and it was awesome), leftover Great Harvest 100% whole wheat bread.
Wednesday: Pre-grilled chicken from Saturday’s grillage, brown rice, broccoli.
Thursday: Tomato soup and grilled cheese sandwiches.
Friday: Pork chops for the guys, veggie fritatta for me, sweet potato fries, slaw.
Saturday: ?? for the boys. Date night at home: chicken with sauce, spinach, leftover rice, frozen mini apple pies.
These seven dinners for us will probably cost about $24.00. I didn’t keep tight tabs on this, but when I planned it out a few weeks ago, I tried to keep the week’s costs for April below $25. And I have stuff in the freezer that I relied on this week due to a shift in my work schedule. And, you know, the weather.
