Can you say, “Leftovers!” Omigosh, we had so much turkey left! This year, I brined it like Yummilicious did, and it was wonderfully rich. The breast and one quarter were roasted, and the rest was Crocked. So flavorful, we got more out of each bite, and ate half of what I expected. Now I’ve got turkey for days.
This week we have a few evening events to consider, but mostly it’s a “normal” week. This is a good thing, since it’s gonna get crazy soon. Here’s what’s on our dinner menus this week:
Sunday: Pork roast (2.99, and there will be leftovers for lunch), Make-Ahead Twice-Baked Potatoes (.40), peas and carrots (.88).
Monday: Spaghetti with red sauce ($1 total), salads (.45).
Tuesday: Turkey (leftover ~.75) stew/soup (recipe tbd), bread rolls (.69), salads (.45).
Wednesday: Bear Creek beef stroganoff noodles ($2) with Laura’s Lean beef eye of round (2.19), carrots (.30).
Thursday: Boneless skinless chicken breasts (free!), rice (.40), broccoli (.99).
Friday: Boys fend for themselves (maybe frozen pizzas, maybe Taco Bell); us out.
Saturday: Repeat Friday.
These meals for four (other than going out) will cost me about $14. The turkey will be picked and packaged for the freezer, after breast slices are set aside for sandwiches. I made two casseroles Saturday, one for the freezer, already. It’s nice to have ingredients at the ready.
