Hello, menu sharing peeps! It’s in the 20s and 30s here today, and will get up to the hi 50s later in the week. “Oy, the weather!” — from The Lion King.
Anyway, I have some yummy comfort foods on my menu this week, some of which are also fast fixin’. Not so much a crazy week (oh, NOW I’ve jinxed it!), but I want to take it easier before the holiday season kicks in — in just a week and a half!!! Also, I’ve planned the meals for the opportunity for me to take less starches. Here’s what’s on our menu this week.
Sunday: Meatloaf from the freezer (~$3), mashed potatoes (.50), carrots (.45), canned fruit cocktail (.91). The boys did not like the fruit with dinner — tough.
Monday: Crock Pot Rotisserie Chicken (~$4), biscuits, green beans, canned pears (.91).
Tuesday: Pan grilled pork chops (1.77/#), peas (.45), noodles with cream sauce.
Wednesday: Grilled beef patties ($2.10), cornbread, slaw, sliced apples.
Thursday: Light and Creamy Chicken (leftover) Enchiladas (from Holly Clegg cookbook), leftover rice for the guys, green salads.
Friday: Cream of tomato soup (my boys decided they like it with milk), grilled cheese and bacon sandwiches, salad for me.
Saturday: I had stuffed chicken planned, but now suddenly realize ain’t no one home for dinner that night! Two camping, one working, and one out. Surprise!
These meals for four will cost me about $23.00. I recently got Eat What You Love from the library, and tagged nearly every recipe — so I put it on my Christmas wish list! Does anyone else love this cookbook? I’m amazed at the amount of sugar and fat in most conventional recipes — yikes.
