Changes in weather are welcome! It’s fall and feels like it, finally. Time for more oven meals and soups (especially with a dental issue for one).
I’ve been trying to lower my own carb intake, so casseroles and such are a challenge. I usually add more protein to mine, take a smaller portion, and pile veggie sides on my plate. It’s working for me.
Here’s what’s on our dinner menus this week:
Sunday: Roasted chicken (1.50), mashed potatoes (.50), broccoli (.33), carrots (.50). About $2.85.
Monday: Ravioli casserole (ravioli 1.80, sauce .69, cheese .50), zuchinni (.33), salads (~.40). About $3.80.
Tuesday: Cheesy potato soup with Progresso starter (~$2), biscuits (.50). About $2.50.
Wednesday: Fettucini casserole from the freezer (1.90) with extra chicken from Sunday (free), green salads (.40). About $2.40.
Thursday: Hawaiian pork roast (3.90), brown rice (.20), pineapple chunks (.91). About $5.00.
Friday: For 2: Roasted chicken leftover (frozen from Sunday (.75), brown rice (.20), green beans (.34). About $1.30.
Saturday: For 3: Pot roast (1.99/#), carrots (.40), potatoes (.40), salads (.30). About $4.10. There will be leftover beef for the freezer!
These home dinners for my family will cost about $22.00. Had to accommodate some crazy schedules, a sore mouth, and very limited funds right now. Next week I’ll be getting really creative with what I already have, so stay tuned.
