What beautiful weather, after the summer we had! It’s been great for grilling, and yesterday we had grill-a-mundo! For dinner we had steaks, with a little planned over for a soup later this week. I also threw on some pork chops and two ginormous split chicken breasts (2#!) for help with dinners this week.
I’ll be socking away some freezer items this week, including Make-Ahead Twice-Baked Potatoes. Those few hours between school and dinnertime are getting increasingly tricky to navigate. Knowing there are main dishes and sides in the freezer for advance planning is so incredibly comforting.
Here’s what’s on our dinner menus this week:
Sunday: Grilled steaks ($3), nuked potatoes (.60), salads (.45). About $4.20.
Monday: Chicken broccoli and rice casserole from the freezer ($3.80) with extra grilled chicken ($2.20). Makes enough for leftovers for lunches, so about $4.50 for this meal.
Tuesday: Wing-it Crock Pot beef and veg soup (beef ~$1, vegs .68, potato .10, broth ~.60), biscuits (.71). About $3.20.
Wednesday: Grilled pork chops (2.35), boiled potatoes (.60), peas and carrots (.68). About $3.70.
Thursday: Pepperoni pizza soup (cost TBD) (trying a recipe), salads (.40). Shooting for $4.00 max.
Friday: For 2: Mac and cheese (1.20), broccoli (.35). About $1.60.
Saturday: For 2: Beantastic taco casserole (filling ~.45, leftover tortillas ~.30, cheese .50), salads (.20). About $2.00.
These home dinners for my family will cost about $23.00. I like the variety this week, including a meatless meal. I don’t have the ingredients yet for Thursday’s meal, but I’m sure I can find some low-cost ingredients; this recipe looks fabulous.
