It’s Back To School week here at Chez CT! One starts Tuesday, one starts Wednesday with a half day. Oh, the confusion that ensues! Luckily, I have my menu plan to get me through the week. These days, easy is the name of the game, and getting the guys fed quickly is key.
So I’m using my own prepared food items, freezer stash, and trusted recipes. Here’s what’s on our dinner menus this week. Share yours!
Sunday: Grilled thick pork chops (~$4 for the meal), corn on the cob (.86), salads (.45). About $5.50. Also grilled free chicken for later.
Monday: Hebrew National hot dogs (1.99), buns (.79), chips (1.50). About $4.30.
Tuesday: Bacon-Chicken Rollups from the freezer (~$3), roasted potatoes (.60), veg TBD (~.50). About $4.10.
Wednesday: DiGiorno pizzas ($6.50 for the meal), salad for me (.10). About $6.70.
Thursday: BBQ grilled chicken (.10 for sauce), homemade mac n cheese (.60), veg TBD (~.50). About $1.25.
Friday: Quiche (crust .15, eggs .33, cheese .50), with leftovers (?), salads (.45). About $2.
Saturday: Burgers (1.88), buns (.25), corn salad (~.65), tomatoes (free or ~.30). About $3.10.
These dinners for my family of four will cost about $22.85. I’ll take it. Lunches are now the focus of my frugality. We’ve set some ground rules and laid out the basic healthy eating plan (which will likely go out the window). Tools in the hands, that’s all I can do at this point.
