Crazy doesn’t begin to describe our week at Chez CT! There’s something (or multiple somethings) going on every day and evening. I’m making use of the Crock Pots and make-ahead strategies to put healthy meals on the table quickly.
Well-stocked coffers are the real blessing this week, and I am so grateful for Daily Bread! I’m making do with bean selections and the pasta sauce ingredients, getting creative with the casserole, and enjoying a family outing during which I don’t cook!
So here’s what’s on our dinner menus this week. Share yours!
Sunday: Leftovers from #1’s food service job! Plus carrots (.30). About .30.
Monday: Crock Pot “Santa Fe Chicken” (chicken $2, corn .21, beans .49, chiles .50, broth .59), rice (.30). About $4.25, and the chicken was “different.”
Tuesday: Pasta (.89) with homemade creamy Parmesan sauce (~$1), salads (.30). About $2.25.
Wednesday: Beef casserole (beef 1.88, salsa 1.20, seasonings ~.20, chips .50, cheese .75). About $4.60.
Thursday: Swiss chicken (chicken $2, sauce ~.75, cheese .50, breading ~.20), green beans (.21). About $3.75.
Friday: BLTs! (Bacon $1, bread .60, lettuce .20, tomato ~.75), sweet potato fries (.90). About $3.50.
These dinners for my family of four will cost about $18.75. Awesome! A variety of meals, tastes, and costs, too! The leftovers (ham, chicken, roast beef, potatoes) were great, too. Easy is the name of this game. Wish the upcoming senior year would be so easy.
