This week I turn to my menu planning again for sanity. Strangeness, last-minute stuff, and a mid-week return to four of us at the table, all play their roles in this drama. The menus start out easy, and continue through the heat and storms with Crock Pots, leftovers and fast-fixin’.
We’ve got a weary traveler returning this week, and I have no idea how his appetite will be affected. So, I plan for big, and go from there. Jet lag will be a factor, as will life in general. Here’s what’s on our dinner menus this week:
Sunday: BirdsEye Voila! (3.50), green salads (.50), garlic bread (.50). About $4.50.
Monday: Crock Pot turkey breast (3.17 for one meal), rice (.30), broccoli (.50). About $4.00.
Tuesday: Picnic dinner at the pool — sandwiches (~$3), chips (.80), Coke ($1). About $5.00.
Wednesday: Leftover turkey breast (3.17 for the meal), steamed potatoes (.25), green salads (.50). About $4.25.
Thursday: Italian sausage (1.99), navy bean (.45), tomato (.25) skillet, broccoli (.50). About $3.25.
Friday: BBQ pork (~$2), sweet potato fries (1.99), salad (.50). About $4.50.
Saturday: Leftover grilled beef (Foodsavered in the freezer; cost included in other meals) on big green salads with whatever vegs I have on-hand (~$2). About $2.
These dinners for varying guests will cost about $27.50. I find we’re getting by just fine with smaller portions and certainly less meat. This week I didn’t plan a meatless meal, but next week will definitely see one or two. I’m trying to use the oven as little as possible (supposed to be 100 deg Monday and close to it Tuesday), and to use leftovers effectively. The microwave and fridge are definitely my friends these days. Summer is definitely here.
