HERE’s a terrific new guide to food storage — when to toss, how long to keep, what temp is safe.

If you are interested in a food safety course, the Douglas County Extension holds ServSafe classes, geared toward food service for schools, restaurants and institutions, that is really quite excellent.  You might learn a few new things.  It costs about $25, lasts just a few hours, and you are tested at the end (for certain requirements).
