Menu Planning 7/17-7/23/11

Hot, hot, hot!  And the weather, too 😉 .  How do you keep the kitchen cool in summer?  You could take advantage of the Blimpie/Frozn Spoonz deal, or make “cold plate” (salad, cottage cheese, and/or garden vegs), sandwiches, or big salads.  We change things up when it gets this unbearable.

And by “unbearable,” I mean 98 sunny degrees, high dewpoints, and heat indices around 108 degrees!  With one kid working in the corn fields, and the other recouping from a week (in similar weather) at Scout camp.  Fun times for Mom.  And the regular weekly activities are still happening, so zipping home, feeding the faces, and heading back out, happens at the hottest time of day.  So it goes.

To assist this week, and keep my kitchen cool(er) and meals easy-peasy, I’m using several items sitting prepared in my freezer or fridge.  And I’m thankful for my microwave, since DH likes a hot dinner.  Here’s what’s on our dinner menus this week:

Sunday:  Super deal on steaks ($5 for the meal’s meat, with leftovers) grilled inside, nuked potatoes for the guys (.50), green salads (.50).  About $6.00.

Monday:  Whole grain pasta (.39) , turkey meatballs from the freezer (1.80), garlic loaf for the guys (.50), salads (.50).  About $3.19.

Tuesday:  Fast and furious:  Nuked beef jumbo hot dogs (.50), buns for the guys (.30), Uncle Bill’s Microwave Potato Chips for the guys (.40), tomatoes and carrots.  About $1.50.

Wednesday:  Pork bbq (3.50), steak fries from scratch for the guys (.30), slaw (.25), tomatoes for me.  About $4.25.

Thursday:  Pan-grilled chicken breasts (1.50), brussels sprouts (FREE) with bacon (.63), noodles for the guys (.40).  About $2.55.

Friday:  Ground chicken tacos ($1.50) on soft tortillas (1.39), leftover rice for the guys (.20), black beans (.50), misc leftover bits of cheese and lettuce (.30).  About $4.40.

These menus will get my family through the week for about $22.00, with a rare steak splurge (pardon the pun).  I’m using the nuke machine for most of the cooking, but will turn on the broiler or stovetop for a few things.  I know for sure there won’t be any cookies baked this week!
