Menu Planning 7/10-7/16/11

With the 8-5 gig this week, I was glad to have those easy meals planned out last week.  This week we have just two of us home until Saturday, and our schedule is off because of early detasseling days. 

I’ve also been trying to lose 1.5#/week through Slimmer This Summer, and have been at .5#/week.  So these dinner menus will reflect that effort.  More vegs, no noodles and such for me; as much as the teen would like to have for himself.

I also have to have fast and easy meals at the ready, due to some evening activities and potential changes of plan.  So here are our dinner menus for the week:

Sunday:  Buffalo Chicken Burgers (chicken .74 for 3) (buns for him, .17), (fries for him .25), cauliflower for me (.40), Lahanosalata (Greek Cabbage Slaw/Salad) (~.60).  About $2.16.

Monday:  Turkey/broccoli/pasta (for him) bake with leftovers carefully preserved in the freezer (FREE), salads (.30), (whole wheat garlic slices for him, .33).  About .55.

Tuesday:  Pan-grilled boneless pork steaks ($2), German-Style Green Beans (~.60), (noodles for him (.25), salad with tomatoes (.50).  About $3.35 with enough leftover pork for a stir-fry.

Wednesday:  Spinach-stuffed chicken (3.50 splurge), brown rice (.20), salads (.30).  About $4.00.

Thursday:  93% lean beef burgers (1.50) with feta (.60) topping, green veg medley (~.40), (rice for him, .10), salads (.30).  About $2.40.

Friday:  Veg (any leftovers)/cheese (.50) quiche (.50) (no crust for me), salads (.30), (whole wheat garlic slices for him, .33).  About $2.20.

Saturday:  Everyone home again:  Swiss chicken from the freezer (1.50), green beans (.50), salads (.50), (noodles for them, .60), leftover whole wheat bread for them.  About $3.10.

These menus will get my family through the week for about $17.75, with some leftovers and a splurge.  Giant lunches for #1 in the field will include lots of fruit and protein.  I’m still on my special eating plan, and these meals fit right in.
