Pizza Casserole on the Cheap Side

Betty Crocker recently sent me this recipe for Pizza Casserole.  It looks really yummy!  But I played with it to make it Cheap, too.  You can make this whole dish for six for just $2.55!  That’s just .44 per serving!

8 ounces uncooked pasta (about 3 1/2 cups) Use Healthy Harvest rotini or penne rigate on sale this week; 8 oz will cost about .24

1/2 pound bulk turkey Italian sausage Make your own sausage from 1# Louis Rich ground turkey on sale this week; 1/2# will cost .49; figure .10 for seasonings

2 3/4 cups meatless tomato pasta sauce Use Hunt’s on sale this week; will cost .43

1/4 sliced ripe olives A pantry staple purchased at <.69

1 cup shredded fat-free or part-skim mozzarella cheese (4 ounces) On sale this week; 1 cup will cost .59, but we get it when it’s even cheaper

  1. Heat oven to 350º. Cook macaroni as directed on package; drain. Cook sausage in skillet, stirring frequently, until no longer pink; drain.
  2. Mix macaroni, sausage, pasta sauce, and olives in 2 1/2-quart casserole.
  3. Cover and bake about 30 minutes or until hot. Sprinkle with cheese. Let stand about 5 minutes or until cheese is melted.

This is a terrific throw-together meal for frugal times.  Toss a green salad (.75 for six), or nuke some green beans with garlic (.25), or steam some frozen broccoli (.23 recently on sale) to round out the meal.  Mangia!  (Did I already say that this week?)
