Menu Planning: 2/20-2/26/11

What has Cheap Thrills planned for this week?

Lots of chicken in my freezer, I discovered.  I’d been taking advantage of great deals on split breasts (.88/#) and while fryers (.79/#), and there’s the last of the FREE Smart Chicken from January.  I didn’t realize just how much poultry was in there!  So three evenings of chicken this week, all prepared differently.  We were at the cabin Sunday night, so I had a prepped and frozen meal of Champagne Stuffing Chicken, a dish I made up with bl/sl breasts, stuffing mix, leftover champagne and shredded Swiss.  And since we’re coming and going a great deal this week, there are Crock Pot meals on the menu, too.  This is a great time of year for salad as a side.  And the starches are mostly sides, too, so I can avoid or reduce them.  Here’s what’s on our dinner menu:

Sunday C:  Champagne Stuffing Chicken (~1.50 chicken, .74 stuffing, .25 soup, .50 cheese), green beans (.25)

Monday B:  Healthy Harvest spaghetti (.68), meatballs and sauce (1.18), garlicky broccoli ($1)

Tuesday C:  whole roasted chicken (3.15), roasted potatoes (.60), carrots (.50), salads (.50)

Wednesday P:  Crock Pot pork butt bbq (.99/#, extra for the freezer), oven fries ($1), salads (.50)

Thursday T:  Swedish turkey meatballs (meatballs 1.25, Cooking Creme .98) (trying new recipe), noodles (.50), salads (.50)

Friday C:  Sweet Salsa Dump Chicken (nearly free jam, salsa .60, chicken .88/#, nearly free seasoning), rice (.10/serving), mixed veg (.88)

Saturday V:  veg soup ($1), homemade cheese biscuits (~.50 for all) (BH&G cookbook)
