Menu Planning: 1/30-2/5/11

What has Cheap Thrills planned for this week?

I’ve done a lot of freezer cooking lately.  That will help when I get back to work in a week or two, and on Manic Mondays.  meanwhile, I’m trying to cook simple, fresh meals now, when I have the time.  But the weather is cold, and dinner needs to be hearty.  So this week I’m relying on my oven, and using it to cook extras, as well.  Here’s what’s on our dinner menu:

Sunday:  Beans and Sweet Italian Sausage (sausage 1.99, beans .59, tomatoes <.50) with rotini pasta (.68), Romaine salads (.40) <– this made extras for two lunches!

Manic Monday:  My variation of Cheesy Ham & Potato Casserole (FREE ham, potatoes .44, cream mushroom .38, cheese .50), green beans (.25), carrots (.50)

Tuesday: Crock Pot kraut (.69, apple .25, onion .10) with pan-grilled extra Polish sausage and brats from the freezer (est. $2 total), boiled potatoes (.50)

Wednesday:  Roast chicken breasts (.98/#), apple rice stuffing (.69), vegs tbd b/c we ate most of the carrots Monday

Thursday:  Roast pork shoulder plain (1.68/#) (shred leftovers for freezer), roasted potatoes (.50), broc/cauli/carrot blend (1.18)

Friday:  Fish sticks (2.99 for the big bag), homemade mac/cheese (~$1), salads (.50) <– this has not been made for the last few weeks due to “issues” and “emergency,” but I really want it this week.

Saturday:  TBD from weekly grocery deals, something that can be doubled for the freezer.
