Menu Planning: 1/2-1/8/11

What has Cheap Thrills planned for this week?

I’ll bet everyone is taking a good look at eating habits this week!  For us, it’s been a few weeks of very rich foods, and a few additional soft spots here and there (but mostly here).  Normally, we eat pretty well.  With my crazy work schedule (new to us; common to others), things got off track.  Time to adjust back to normal.  Next week I plan to have even more lean and thigh-friendly dinners.

The big challenge for me this year will be the food between the dinners.  I have healthful, nutritious foods available for breakfasts, lunches and snacks, but have discovered they are being passed over for junk options, or water and dry cereal.  Okay, not good.  I’m working on a plan to get the good stuff in the boys. 

Here’s what’s on our menu:

Sunday:  Crock Pot of chicken tenders (FREE), leftover peas, corn, green beans and onions (~.75), leftover hash brown potatoes (.25), leftover half can of soup (.06), water; biscuits (.25)

Monday:  Lean bbq pork (.99/#) in the Crock, oven steak fries (scratch, .50), salad (.50)

Tuesday:  Holly Clegg’s Light and Creamy Chicken Enchiladas (leftover chicken for less than .50, tortillas $1, cheese .75), brown rice (.10/serving)

Wednesday:  Tentative:  Hot dogs (leftover from camping last week), tortilla chips (.50), carrot sticks (.80)

Thursday:  Pan-grilled chicken (~$1), leftover brown rice (.10/serving), broccoli (.38) w/cheese sauce (~.75 from scratch)

Friday: Turkey ($1/#) burgers, tortilla chips (.50), carrot sticks (.80)
