Cheap, Easy and Delicious Peanut Butter Cookies!

Recently, Dawn commented with an easy cookie recipe.

Here’s a great, easy cookie recipe for peanut butter cookies:
1 cup peanut butter
1 cup sugar
1 egg
1 tsp vanilla
combine all ingredients together.
place tablespoons onto greased cookie sheet.
bake 12-15 minutes at 350

She confirmed there is no flour in these, which I found intriguing.  They’re definitely not allergen-free, but if you’ve got a celiac issue in your family, this might work for you.  I gave them a shot, and I can tell you WOW!  These are SO easy, and SO good!

For the trial run, I made the recipe as-is.  They cooked up more firmly than I expected, in teaspoonful drops.  This makes a soft, puffy cookie, rather than a flat crisp one.  Two-bite gems for a Christmas cookie plate.  Let them cool on the (parchment-lined) pan for 2 minutes, then transfer to a cooling rack.  Unfortunately, I was reminded that I did not put the fork marks on the top — well!  Don’t forget that when you make yours.  You’ll probably have to use the Tablespoonful drops, and that will give you closer to a dozen crispier cookies.

While the first dozen was cooking, I added about 1/4 cup chocolate chips to the remaining batter.  OMIGOSH!  I’m not usually one for mixing peanut butter with CHOCOLATE, but thought I give it a whirl for the guys.  They turned out very yummy, but they liked the plain better.

This is a versatile recipe.  I can see a quick roll in colored sugar, or finely chopped nuts.  Butterscotch chips would be different, or you could use any other cookie add-ins.  You could also do the Hershey kiss on top thing.

Total cost for 2 1/2 dozen small or 1 dozen large: .62!
