Tex-Mex Take on Chicken Lasagna

Betty Crocker recently sent me this recipe for Taco Fiesta Chicken Lasagna.  I don’t know about you, but “taco” and “lasagna” don’t belong in the same title, imho.  Still, it looks like a great recipe, and I’m going to try it.  It’s a Cheap Thrill, too!  Take advantage of sale items, everyday low prices, and freezer/pantry techniques to keep feeding your family frugally.

Ingredients:

2 (14 1/2-oz.) cans diced tomatoes with zesty mild green chiles, undrained (.38 @ Baker’s recent sale w/coupon) 
1/4 cup taco sauce (1.29 @ Aldi)
3 cups cubed cooked chicken (FREE)
1 (16-oz.) can Old El Paso® Refried Beans (.50/1 coupon HERE)
1/2 cup sour cream (.35 Roberts coupons; about .80 for 1/2 cup)
12 uncooked lasagna noodles (FREE)
12 oz. (3 cups) shredded colby-Monterey Jack cheese (.99 for 2 cups {you can use less for this recipe} — I never pay more than $1 for cheese; when it goes on sale, I stock up and keep it in the freezer; or use what you got FREE with that $5/5 Kraft coupon a while back)
1/2 cup chopped green onions (3/$1 recently, but very cheap most of the time)
1/4 cup sliced ripe olives, if desired ($1/1 coupon HERE; or about .99 canned on sale)
2 tablespoons chopped fresh cilantro (I skip this b/c it’s preferential, or use parsley if we have it)

Total for the recipe:  about $4.00!  Says it makes 8 servings (or one pan for now, one for the freezer), so that’s about .50 per serving.  You could skip the olives (my boys don’t like them), or use chopped yellow onion (FREE last week) which won’t be as mild. 

To freeze: make the dish, but don’t bake.  You don’t even have to let it sit overnight; just put in a pan, seal tightly, label and freeze.  When it’s time to cook, thaw 24-48 hours in the fridge, then bake as directed.

Serve this with a nice green salad, with any add-ins that make you happy.  A quick theme dressing: half salsa, half ranch.  Yum!

  1. Mmm. I think there are as many recipes for that as there are households! lol! King Ranch, etc. I thought this chicken recipe was differnt b/c it uses lasagne noodles. (And my chicken is FREE!)

  2. We make something called a Taco Bake and this reminded me of it. With ours though we cook the hamburger meat then add the taco seasoning. Then we make a Kraft mac & cheese deluxe dinner kit. Mix in about 1/4 c sour cream when done cooking it. Then layer ingredients and top with taco sauce and cheese , mmmm.
