There’s barely a nip of autumn in the air, and the weather turns hot and steamy again! That’s okay….it’ll be cold and stormy tonight. Unpredictable, to say the least. And my Weekly Dinner Deal is, as well. What I have menu-planned doesn’t always work out. Sometimes a project takes all day, and suddenly it’s 4:15 with nothing defrosted. Sometimes, I just don’t feel like cranking up the oven when it’s a heat index of nearly 100 degrees. Ya know?! This week’s Dinner Deal is put together from grocery bargains: Lemon Pepper Chicken Breasts with Rice-Stuffed Peppers and Cole Slaw.
The marinated Gold N Plump chicken breasts were a bargain purchase at Target, pan grilled inside. The sweet green bell peppers were bargains, also at Target, and I stuffed them with brown rice (I almost always have extra in the freezer), garden tomatoes, and aromatic vegs and nuked. Cole slaw is a fall staple around here: cabbage, carrots and bottled dressing (only because I can never seem to get dressing right). All together it’s a nice hot weather meal.
