Tex-Mex Casserole Recipe

Here’s a little something I came up with when Jennie O taco meat was on sale – coupons = $1.98.  It has a nice flavor, and the boys wolf it down. My guys have varying tastes, so I serve salsa on the side, and sour cream if I have it.  Feel free to use alternative ingredients!

The ingredients:

1 package of cornbread or muffin mix, prepared but NOT cooked — Aldi brand is about .39, and so is Baker’s generic.

1 package prepared taco turkey meat by Jennie O  — Buy this on sale with coupons, usually for $1.98.

1 cup shredded Mexican blend or medium cheddar cheese — I buy this on the cheapest sale and keep it in the freezer.

1 cup prepared dried, or canned drained, black beans — I use dried beans that I cook up in the Crock Pot and keep portioned in my freezer — much cheaper!

sliced green onions, optional

salsa to top, optional — Try using Mexican-flavored diced tomatoes with green chiles.

sour cream to top, optional

Preheat oven to 400.  Spray a 8 x 8 pan with nonstick spray.  Pour in half the prepared cornbread batter.  Let sit about 5 minutes.  Layer the taco meat, half a cup of the cheese, the beans, and green onions if using.  Pour remaining batter over the dish and spread to cover.  Top with the remaining half cup of cheese.  Bake for 20 minutes, until a toothpick inserted in the center of the cornbread topping comes out clean.  Bake in additional 5 minute increments if necessary.
