Here’s one I got from a diet book, and it’s great for anytime. The kids even like it, because it has a bite, but it’s still mild enough for them.
2 medium zuchinni (about .60 from Aldi)
4 oz. 1/3 fat cream cheese (Neufchatel), at room temp (about .40 from Aldi)
4 oz. shredded pepperjack cheese (about .50 — .99 sale on 8 oz, grate it yourself)
Preheat oven to 350 degrees.
Halve the zuchinni lengthwise; place cut side down in a glass baking dish. Microwave on Hi for 3 minutes; cool enough to handle. Using a teaspoon, scrape out the seeds and discard. Flip the zuchinni over to fill.
While the zuchinni is cooking and cooling, combine the cheeses with the teaspoon until well mixed. Spoon the mixture into the boats evenly.
Bake at 350 for 15-20 minutes, until melty and slightly brown on top. Let sit about 3-5 minutes before eating — HOT!
